Bring to a boil 2 tablespoons loose chai tea in 4 cups of water. Immediately turn off heat, cover and simmer (for at least 10-15 minutes).
Whisking frequently, heat 16 oz. organic whole milk-raw if possible (or I also like to use nut milks) to just under scolding...ya gatta watch it! while adding 1.5 tablespoons fresh cinnamon, 1/2 teaspoon fresh nutmeg, 1 tablespoon ground fresh cardamom, 1/2 tablespoon ground ginger, 1/2 teaspoon ground clove and 1/2 tablespoon fennel seeds 1 teaspoon of vanilla extract and 1 teaspoon almond extract.
Reduce heat to low and allow spices to infuse for at least 10-15 minutes.
Strain both tea and milk and whisk them together (frothing makes it nice too!).
Sweeten with something earthy and organically grounding like maple syrup, raw sugar or traditional Indian jaggery.

*Ayurvedic suggestion ~ add a teaspoon of ghee or coconut oil per serving
for more grounding influence for our excess air element and or digestive aid for excess water/earth element commonly experienced in Winter
